Southwestern Rice

Ingredients:

  • 1 1/3 cup water
  • 2/3 cup long grain rice
  • 3/4 cup chopped green pepper
  • 1/2 cup chopped red onion
  • 1 medium carrot chopped
  • 1 Tbsp Coconut/Avocado oil
  • 3 cloves of garlic chopped
  • 1 package of frozen corn
  • 1 can black beans
  • 2 medium tomatoes chopped
  • fresh cilantro
  • 2/3 cup olive oil
  • 1/3 cup lemon juice
  • 1/2 tsp cumin

Instructions:

  1. Bring water and rice to a boil. Reduce heat, cover, and simmer 15 minutes
  2. In a small Xtrema skillet, saute the green peppers, onion, and carrot in oil until crisp tender.
  3. Add garlic, cook 1 minute longer.
  4. Add to rice. Stir in corn, beans, tomatoes, and cilantro
  5. In a small bowl, combine oil, lemon juice, and cumin. Pour over rice and stir to coat.
